Originally, I made this for Beef Barbacoa – a slow cooked beef. It’s amazing for tacos, burritos, shredded with mash… YUM!  I also wanted it to be versatile - so I added a couple of special twists – a hint of cherry, some smoky chipotle, and it is now a solid player that gives great colour and depth of flavour – This is one that is right up my alley! Great for long cooks, short cooks and any in between – Works well with beef, lamb, seafood, poultry – this is a surf and turf master!
